You may need 2 skillets if all of your ingredients don't fit in one. The veggies will shrink as they cook so I usually start with a slightly over-full skillet and as they cook down they end up fitting perfectly.
You can use any type of ground Italian sausage. If you are not using hot Italian sausage and still want some kick, add red pepper flakes to your pan while cooking the sausage.
Feel free to substitute butternut squash for the sweet potato and yellow onion for the red onion.
