Preheat oven to 400 degrees. In a medium bowl mix together the pecans, maple syrup, and salt. Pour onto a medium-sized parchment-lined sheet pan.
Bake in the oven for about 15 minutes, stirring every 5 minutes until pecans are golden brown.
Dressing
Whisk together the olive oil, red wine vinegar, maple syrup, Dijon mustard, and salt.
Salad
In a large bowl combine the mixed greens, pomegranate seeds, apple, goat cheese, and candied pecans.
Drizzle with the dressing, toss, and serve!
Notes
Feel free to use feta cheese instead of goat cheese if you prefer.You can also add dried cranberries or substitute the apples for pears.If you don't have red wine vinegar, try replacing it with balsamic.
