Pancake Cups

This recipe serves one, but it's super easy to prep a bunch at once for a whole week!

Ingredients
  

Pancake Cups

  • 1/2 cup Kodiak Power Cakes Flapjack and Waffle Mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla

Add-ins (optional)

  • 1 large strawberry chopped
  • 2 tbsp chocolate chips
  • 1/4 cup blueberries
  • 2 tbsp pecans chopped

Instructions
 

  • In a small bowl whisk together the pancake mix, egg, milk, syrup, and vanilla.
  • Add in your toppings of choice. I like strawberries and chocolate chips, blueberries, or chocolate chips and pecans.
  • Cover and place in the fridge for later or microwave immediatley.
  • Microwave for 1 1/2 - 2 minutes. The pancake will puff up and be set in the middle. Top with extra syrup if you desire!

Notes

The cook time will vary depending on the depth of your bowl. If you're unsure whether your pancake is fully cooked, check that the center is set.
