One Pot Gnocchi

Ingredients
  

  • 1 pound Italian sausage mild or hot
  • 1 small yellow onion chopped
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 28 oz crushed tomatoes
  • 1/2 cup water
  • 1 bunch kale stems removed and chopped
  • 1 pound gnocchi uncooked
  • 1/2 cup parmesan cheese shredded
  • 8 oz burrata cheese

Instructions
 

  • Heat a large cast iron or oven-safe skillet over medium-high heat. Add Italian sausage and break apart into small chunks.
  • Once Italian sausage is half cooked, about 4 minutes, add the chopped onion and cook for 2 minutes.
  • Add the garlic powder, Italian seasoning, and red pepper flakes. Mix and cook for about 3 more minutes until the onion is translucent and the Italian sausage is fully cooked.
  • Heat oven to 425 degrees.
  • Add the crushed tomatoes and water. Once simmering, turn down the heat to low and simmer for 10-15 minutes.
  • Stir in the kale. Once wilted, add the gnocchi. Top with Parmesan cheese.
  • Place the burrata on top by breaking it apart so chunks are evenly distributed.
  • Add the skillet to the oven and cook for 10-15 minutes, until the cheese is melty and the sauce is bubbling.
  • Serve immediately and enjoy!

Notes

You can use spinach or Swiss chard instead of the kale.
Feel free to add other veggies like mushrooms or zucchini. 
Add some spice to the dish by using hot Italian sausage.
