Drizzle olive oil in a large pot over medium-high heat. Add sausage and cook until browned on all sides about 6-7 minutes. Set the sausage to the side in a bowl.
In the same pan, add the shrimp, sauteing for 3-5 minutes, until pink and fully cooked. Add to the same bowl as the sausage and set aside for later.
Drizzle olive oil into the pot and add onion, bell peppers, and garlic. Saute for about 5 minutes.
Mix in the rice, chicken broth, diced tomatoes, and cajun seasoning. Bring to a simmer and cover, continuing to simmer for 15-20 minutes, until the rice is fully cooked.
Mix back in the shrimp and sausage. Taste and add salt and pepper to your liking.
Notes
To make this a classic jambalaya you can add chicken. I prefer the shrimp and sausage combination, but chicken will add even more protein. You can use jasmine rice, long-grain white rice, or even basmati rice.
