Jambalaya

I use Louisiana Cajun Seasoning which you can find on Amazon or at Walmart.

Ingredients
  

  • olive oil
  • 1 pound raw peeled and deveined shrimp cut in half
  • 1 pound andouille sausage cut into thin rounds
  • 1 onion chopped
  • 3 bell peppers of different colors chopped
  • 3 cloves garlic minced
  • 15 oz can of diced tomatoes
  • 3 cups low sodium chicken broth
  • 1 1/2 cup Jasmine rice
  • 2 tbsp cajun seasoning
  • salt to taste
  • pepper to taste

Instructions
 

  • Drizzle olive oil in a large pot over medium-high heat. Add sausage and cook until browned on all sides about 6-7 minutes. Set the sausage to the side in a bowl.
  • In the same pan, add the shrimp, sauteing for 3-5 minutes, until pink and fully cooked. Add to the same bowl as the sausage and set aside for later.
  • Drizzle olive oil into the pot and add onion, bell peppers, and garlic. Saute for about 5 minutes.
  • Mix in the rice, chicken broth, diced tomatoes, and cajun seasoning. Bring to a simmer and cover, continuing to simmer for 15-20 minutes, until the rice is fully cooked.
  • Mix back in the shrimp and sausage. Taste and add salt and pepper to your liking.

Notes

To make this a classic jambalaya you can add chicken. I prefer the shrimp and sausage combination, but chicken will add even more protein. 
You can use jasmine rice, long-grain white rice, or even basmati rice.
