Gnocchi and Chicken Sausage Sheet Pan

It may seem simple, but just adding lemon juice to this dish gives it a bright, flavorful finish.

Ingredients
  

  • 1 pound potato gnocchi
  • 6 cups broccoli florets (1 large head) cut into pieces
  • 4 links chicken sausage cut into pieces
  • 10 oz cherry tomatoes
  • 3 tbsp olive oil
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 lemon
  • 1/2 cup shredded parm

Instructions
 

  • Preheat oven to 400 degrees. Prepare a large baking sheet with nonstick cooking spray.
  • In a large bowl, mix together gnocchi, broccoli, chicken sausage, tomatoes, salt, pepper, garlic powder, onion powder, and olive oil.
  • Pour the gnocchi mixture onto the baking sheet, spreading evenly.
  • Bake for 30-35 minutes, mixing halfway through, until veggies are tender.
  • Once out of the oven, drizzle with lemon juice and sprinkle with parmesan cheese. The cheese will melt as it is added to the hot food. Serve immediately!

Notes

You can substitute broccoli and tomatoes for other veggies or add more veggies on top. Some recommendations are asparagus and bell peppers. 
This is an awesome dish to meal prep and save for lunches throughout the week or make ahead of time and warm up for dinner when you have a busy night. 
I keep my cherry tomatoes whole while baking because I like the texture they add to the finished dish.
