Easy Guacamole
Eat your guacamole with tortilla chips or use it as a topping on tacos, nachos, enchiladas, or even as a base for avocado toast!

- 2 ripe avocados
- 1 lime juiced
- 1/4 cup cilantro chopped
- 1/4 cup white onion diced
- 1 tbsp pickled jalapeños chopped (optional)
- 1 tomato chopped (optional)
- 1/2 tsp salt
Scoop the inside of the avocado into a bowl and mash with a fork.
Mix in lime juice, onion, cilantro, jalapeños, tomato, and salt.
Taste and adjust with lime juice or salt.
Serve immediately!
If you are not serving immediately, place it in a bowl, pressing down with a spoon so there are no air bubbles. Then press a piece of plastic wrap directly on top of the guac. This allows no air to get in so that it won't brown as quickly. Another trick is to add lime juice on top which should also protect it from browning as fast. Store in the fridge.
Make sure that you are using ripe avocados. They should have some give when you press on them, but not be mushy. To cut your avocado, use a sharp knife and cut all the way around the avocado length-wise, pressing your knife against the pit but not cutting into it. Take your hands on each side of the cut avocado and pop it open by twisting each side the opposite way. Tap your knife against the pit and twist to remove it. Now you can scoop out the insides of the avocado!
If you want even more kick, add fresh jalapeños instead of pickled.
You can use any type of onion. I use yellow or red onion if I don't have white onion.
