Chicken Salad Wrap

You can eat the chicken salad on its own or even wrap it in lettuce for a carb-free meal!

Ingredients
  

  • 1/2 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice, about 1/2 lemon
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 cup chicken cooked and shredded
  • 1 cup celery chopped
  • 1 cup apple chopped
  • 1/2 cup dried cranberries
  • 1/2 cup pecans chopped
  • 6 large tortillas
  • 6 slices provolone cheese
  • lettuce or spinach

Instructions
 

  • In a large bowl whisk Greek yogurt, mayonnaise, lemon juice, salt, and pepper.
  • On top of the yogurt mixture add the shredded chicken, celery, apple, dried cranberries, and pecans. Mix so that everything is evenly coated in the dressing.
  • Lay out a tortilla, place cheese, lettuce or spinach, and 1/6 of the chicken mixture. Wrap it like a burrito and enjoy.

Notes

I use shredded rotisserie chicken in this recipe. 
You can make the chicken salad ahead of time and use throughout the week for wraps.
Feel free to substitute all of the mayonnaise with Greek yogurt for a lighter dish or all of the Greek yogurt with mayonnaise for a richer chicken salad.
