Banana Pancakes
I love adding chocolate chips, nuts, peanut butter, and syrup to my banana pancakes.

- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 banana mashed
- 2 eggs
- 1 cup milk
- 1/4 cup plain greek yogurt
- 1 tbsp sugar
- 1/2 tsp vanilla
- unsalted butter for cooking
In a large bowl, mix together flour, baking powder, and salt.
In a medium bowl, mix together mashed banana, eggs, milk, greek yogurt, sugar, and vanilla.
Mix the wet ingredients into the dry ingredients, being careful not to overmix.
Heat a large skillet over medium heat, adding a small pat of butter. Once butter is melted pour about 1/2 cup pancake batter into the skillet.
Once the pancake begins to bubble, flip and cook for about 2 more minutes.
Serve with toppings of your choice!
I like to use over-ripe bananas with at least some brown spots on them because they tend to be sweeter and easier to mash.
If I don't have fresh bananas, I use frozen ones. Defrost in the microwave for 30 seconds before using.
My favorite yogurt to use is Fage 2% Greek yogurt.
