Sweet and Spicy Fall Skillet

This recipe is a hit all year round but is especially delicious in the cooler months when you’re looking for a healthy and cozy meal. Spicy Italian sausage, sweet potato, Brussels sprouts, feta, and honey combine to ensure every bite is packed with flavor. And it re-heats well as leftovers so don’t worry if you end up having extra!

Sweet and Spicy Fall Skillet

This is a one-pot meal, great to throw together on a weeknight.

Ingredients
  

  • 1 pound hot Italian sausage
  • 1 large red onion chopped
  • 1 large sweet potato or 2 small cut in 1/2 in cubes
  • 1 pound Brussel sprouts cut in half
  • 1/2 tsp ground thyme
  • 1/2 tsp ground rosemary
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 2 tbsp honey
  • 1/2 cup feta crumbled

Instructions
 

  • Heat a cast iron skillet over medium-high. Once the skillet is warm, add the Italian sausage and cook until brown and caramelized about 5-6 minutes.
  • Mix in the sweet potatoes, brussels sprouts, red onion, thyme, rosemary, garlic powder, onion powder, and black pepper. Add 1/3 cup of water and place the top on the skillet.
  • Cook on medium heat for about 25-35 minutes, stirring every 5-10 minutes.
  • Once the veggies are fork-tender, turn the oven to broil at 500 degrees.
  • Sprinkle feta on top of the veggie mixture and drizzle with honey. Add to the oven and broil for about 3-5 minutes, until your cheese is starting to brown.
  • Remove from the oven, serve, and enjoy!

Notes

You may need 2 skillets if all of your ingredients don’t fit in one. The veggies will shrink as they cook so I usually start with a slightly over-full skillet and as they cook down they end up fitting perfectly. 
 
You can use any type of ground Italian sausage. If you are not using hot Italian sausage and still want some kick, add red pepper flakes to your pan while cooking the sausage.
 
Feel free to substitute butternut squash for the sweet potato and yellow onion for the red onion.

Amazing comfort recipe and super easy to make! I used a spicy honey to add to the spice level but the recipe is perfect!
