Sheet Pan Chicken Fajitas

Sheet pan meals are the best because you don’t have to dirty a bunch of pots and pans to create an amazing meal. Just prep, toss it in the oven, and go! This chicken fajita recipe makes the juiciest chicken and perfectly tender peppers and onions. I love my chicken fajitas with guac, salsa, sour cream, and cheese, all wrapped in a soft flour tortilla.

Sheet Pan Chicken Fajitas

Serve in a tortilla, on a bowl of rice, or just eat on its own. Always best to load up on toppings!

Ingredients
  

Sheet pan

  • 2 pounds chicken breast cut into bite size pieces
  • 1 large onion cut into small strips
  • 3 bell peppers of different colors cut into small strips
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Toppings

  • small flour tortillas
  • sour cream
  • guacamole
  • salsa
  • cheddar cheese shredded

Instructions
 

  • Preheat oven to 350 degrees. Grease a large sheet pan with cooking spray.
  • In a medium bowl, mix together, chicken, peppers, onion, olive oil, and spices.
  • Pour onto the sheet pan, making sure the chicken mixture is in a single layer so that it cooks evenly.
  • Bake for 25-30 minutes, until veggies tender and chicken is cooked through. Internal temperature of the chicken should reach 165 degrees.
  • Warm tortillas up and serve with toppings of your choice.

Notes

You can use a packet of taco seasoning if you don’t want to make your own seasoning blend.
