Pomegranate and Apple Winter Salad

This salad is perfect during the winter when you’re looking for something fresh and sweet. The pomegranates give it the perfect pop of color and a juicy bite, while the goat cheese provides a savory, creamy element. Add in homemade candied pecans, and this salad is the ideal side dish that comes together in less than 30 minutes.

Ingredients
  

Salad

  • 10 oz mixed greens
  • 1 cup pomegranate seeds
  • 1 apple chopped
  • 5 oz goat cheese crumbled

Candied Pecans

  • 1 cup pecans
  • 1/4 cup maple syrup
  • salt to taste

Dressing

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • salt to taste

Instructions
 

Candied Pecans

  • Preheat oven to 400 degrees. In a medium bowl mix together the pecans, maple syrup, and salt. Pour onto a medium-sized parchment-lined sheet pan.
  • Bake in the oven for about 15 minutes, stirring every 5 minutes until pecans are golden brown.

Dressing

  • Whisk together the olive oil, red wine vinegar, maple syrup, Dijon mustard, and salt.

Salad

  • In a large bowl combine the mixed greens, pomegranate seeds, apple, goat cheese, and candied pecans.
  • Drizzle with the dressing, toss, and serve!

Notes

Feel free to use feta cheese instead of goat cheese if you prefer.
You can also add dried cranberries or substitute the apples for pears.
If you don’t have red wine vinegar, try replacing it with balsamic.
