Freshen up any Mexican meal with homemade pico de gallo. It only takes a few minutes to toss together and uses just five simple ingredients. If you have a garden, this is an excellent way to enjoy some of your tomatoes, but you can also go store-bought with just about any variety.
I love making this recipe to pair with Chicken Fajitas and to use as a side with Guacamole!
Pico de Gallo
Enjoy with chips, on tacos, quesadillas, nachos, burrito bowls, or any other dish of choice.
Ingredients
- 2 cups tomatoes chopped
- 1/2 cup red onion diced
- 1/2 cup cilantro chopped
- 2 tbsp fresh lime juice about 1 lime
- 1/2 tsp salt
Instructions
- Mix chopped tomatoes, onion, cilantro, lime juice, and salt in a medium bowl.
- Taste and add more salt or lime juice as needed.
- Enjoy!
Notes
This dish is best enjoyed fresh or within a day. If you have any leftovers, store in a sealed container in the fridge. It will become more liquid over time as the tomatoes sit.
