Pancake Cups

This is one of my all-time favorite meal prep breakfasts. I make a batch at the beginning of the week and grab one each morning for a delicious and filling way to start the day. It’s easy to mix and match toppings to add fun variety to your morning meals.

You can find the Kodiak Power Cakes Flapjack and Waffle Mix that I use at Costco, Target, Walmart, or Amazon! You can also purchase on their website!

This recipe serves one, but it's super easy to prep a bunch at once for a whole week!

Ingredients
  

Pancake Cups

  • 1/2 cup Kodiak Power Cakes Flapjack and Waffle Mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla

Add-ins (optional)

  • 1 large strawberry chopped
  • 2 tbsp chocolate chips
  • 1/4 cup blueberries
  • 2 tbsp pecans chopped

Instructions
 

  • In a small bowl whisk together the pancake mix, egg, milk, syrup, and vanilla.
  • Add in your toppings of choice. I like strawberries and chocolate chips, blueberries, or chocolate chips and pecans.
  • Cover and place in the fridge for later or microwave immediatley.
  • Microwave for 1 1/2 – 2 minutes. The pancake will puff up and be set in the middle. Top with extra syrup if you desire!

Notes

The cook time will vary depending on the depth of your bowl. If you’re unsure whether your pancake is fully cooked, check that the center is set.

I love how easy this recipe is! I hate having to make a whole batch of pancakes when I really just want one and this solves it. I used a different pancake mix but followed the rest of the recipe and it turned out great! Topped with butter and jam and this was an awesome quick breakfast!
