One Pot Gnocchi

Ingredients
- 1 pound Italian sausage mild or hot
- 1 small yellow onion chopped
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 28 oz crushed tomatoes
- 1/2 cup water
- 1 bunch kale stems removed and chopped
- 1 pound gnocchi uncooked
- 1/2 cup parmesan cheese shredded
- 8 oz burrata cheese
Instructions
- Heat a large cast iron or oven-safe skillet over medium-high heat. Add Italian sausage and break apart into small chunks.
- Once Italian sausage is half cooked, about 4 minutes, add the chopped onion and cook for 2 minutes.
- Add the garlic powder, Italian seasoning, and red pepper flakes. Mix and cook for about 3 more minutes until the onion is translucent and the Italian sausage is fully cooked.
- Heat oven to 425 degrees.
- Add the crushed tomatoes and water. Once simmering, turn down the heat to low and simmer for 10-15 minutes.
- Stir in the kale. Once wilted, add the gnocchi. Top with Parmesan cheese.
- Place the burrata on top by breaking it apart so chunks are evenly distributed.
- Add the skillet to the oven and cook for 10-15 minutes, until the cheese is melty and the sauce is bubbling.
- Serve immediately and enjoy!
Notes
You can use spinach or Swiss chard instead of the kale.
Feel free to add other veggies like mushrooms or zucchini.
