Jambalaya

Jambalaya is a one-pot recipe full of andouille sausage, shrimp, bell peppers, tomatoes, onion, rice, and Cajun spices. The seasoning gives it a nice kick, and you get all your veggies, protein, and grains in one dish. It’s perfect for company since one recipe makes six large servings, or make it for yourself and enjoy loads of leftovers!

Jambalaya

I use Louisiana Cajun Seasoning which you can find on Amazon or at Walmart.

Ingredients
  

  • olive oil
  • 1 pound raw peeled and deveined shrimp cut in half
  • 1 pound andouille sausage cut into thin rounds
  • 1 onion chopped
  • 3 bell peppers of different colors chopped
  • 3 cloves garlic minced
  • 15 oz can of diced tomatoes
  • 3 cups low sodium chicken broth
  • 1 1/2 cup Jasmine rice
  • 2 tbsp cajun seasoning
  • salt to taste
  • pepper to taste

Instructions
 

  • Drizzle olive oil in a large pot over medium-high heat. Add sausage and cook until browned on all sides about 6-7 minutes. Set the sausage to the side in a bowl.
  • In the same pan, add the shrimp, sauteing for 3-5 minutes, until pink and fully cooked. Add to the same bowl as the sausage and set aside for later.
  • Drizzle olive oil into the pot and add onion, bell peppers, and garlic. Saute for about 5 minutes.
  • Mix in the rice, chicken broth, diced tomatoes, and cajun seasoning. Bring to a simmer and cover, continuing to simmer for 15-20 minutes, until the rice is fully cooked.
  • Mix back in the shrimp and sausage. Taste and add salt and pepper to your liking.

Notes

To make this a classic jambalaya you can add chicken. I prefer the shrimp and sausage combination, but chicken will add even more protein. 
You can use jasmine rice, long-grain white rice, or even basmati rice.
