An easy one-pan dinner that is healthy and delicious. It’s filled with roasted veggies and topped with lemon and parmesan cheese. Baking the gnocchi makes it slightly crispy on the outside while keeping it tender on the inside.
All you need is a bowl to mix everything together and a sheet pan to bake it in. This recipe is the perfect combination of minimal work, tons of veggies, and flavor.
Gnocchi and Chicken Sausage Sheet Pan
Ingredients
- 1 pound potato gnocchi
- 6 cups broccoli florets (1 large head) cut into pieces
- 4 links chicken sausage cut into pieces
- 10 oz cherry tomatoes
- 3 tbsp olive oil
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1 lemon
- 1/2 cup shredded parm
Instructions
- Preheat oven to 400 degrees. Prepare a large baking sheet with nonstick cooking spray.
- In a large bowl, mix together gnocchi, broccoli, chicken sausage, tomatoes, salt, pepper, garlic powder, onion powder, and olive oil.
- Pour the gnocchi mixture onto the baking sheet, spreading evenly.
- Bake for 30-35 minutes, mixing halfway through, until veggies are tender.
- Once out of the oven, drizzle with lemon juice and sprinkle with parmesan cheese. The cheese will melt as it is added to the hot food. Serve immediately!

I made this last night for dinner and it was delicious. I put all of the ingredients in a bag and then added the oil and seasonings. It was easy to mix this way. I also added eggplant and it worked very well. I will definitively make this again.
