Chicken Salad Wrap

Sweet, savory, creamy, and packed with protein; this recipe has it all.

Crisp apples and tart cranberries combine with savory chicken and crunchy pecans to create a chicken salad that will satisfy every taste bud. Add in a dressing that is half mayo and half Greek yogurt, and you get a lighter, healthier take on a classic that is just as flavorful.

Chicken Salad Wrap

You can eat the chicken salad on its own or even wrap it in lettuce for a carb-free meal!

Ingredients
  

  • 1/2 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice, about 1/2 lemon
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 cup chicken cooked and shredded
  • 1 cup celery chopped
  • 1 cup apple chopped
  • 1/2 cup dried cranberries
  • 1/2 cup pecans chopped
  • 6 large tortillas
  • 6 slices provolone cheese
  • lettuce or spinach

Instructions
 

  • In a large bowl whisk Greek yogurt, mayonnaise, lemon juice, salt, and pepper.
  • On top of the yogurt mixture add the shredded chicken, celery, apple, dried cranberries, and pecans. Mix so that everything is evenly coated in the dressing.
  • Lay out a tortilla, place cheese, lettuce or spinach, and 1/6 of the chicken mixture. Wrap it like a burrito and enjoy.

Notes

I use shredded rotisserie chicken in this recipe. 
You can make the chicken salad ahead of time and use throughout the week for wraps.
Feel free to substitute all of the mayonnaise with Greek yogurt for a lighter dish or all of the Greek yogurt with mayonnaise for a richer chicken salad. 

Serve with Broccoli Slaw or Pasta Salad for a fun family lunch!
