Banana Pancakes

Start your day with a stack of fluffy, banana-filled pancakes. These pancakes are easy to throw together in the morning and can be topped or filled however you want. The smell of sweet pancakes might just be the best reason to get out of bed in the morning.

Banana Pancakes

I love adding chocolate chips, nuts, peanut butter, and syrup to my banana pancakes.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 banana mashed
  • 2 eggs
  • 1 cup milk
  • 1/4 cup plain greek yogurt
  • 1 tbsp sugar
  • 1/2 tsp vanilla
  • unsalted butter for cooking

Instructions
 

  • In a large bowl, mix together flour, baking powder, and salt.
  • In a medium bowl, mix together mashed banana, eggs, milk, greek yogurt, sugar, and vanilla.
  • Mix the wet ingredients into the dry ingredients, being careful not to overmix.
  • Heat a large skillet over medium heat, adding a small pat of butter. Once butter is melted pour about 1/2 cup pancake batter into the skillet.
  • Once the pancake begins to bubble, flip and cook for about 2 more minutes.
  • Serve with toppings of your choice!

Notes

I like to use over-ripe bananas with at least some brown spots on them because they tend to be sweeter and easier to mash. 
If I don’t have fresh bananas, I use frozen ones. Defrost in the microwave for 30 seconds before using. 
My favorite yogurt to use is Fage 2% Greek yogurt.
