Pork Gyros

Soft pita bread topped with tender pork, sautéed onions, fresh veggies, tzatziki sauce, and feta cheese is definitely a dinner to look forward to. I always make gyros with my absolute favorite Tzatziki Sauce. Marinating the meat is the key to tender, juicy pork. I marinate mine the night before so it only takes 20 minutes to throw everything together when I get home from work.

You can marinate the pork and onions overnight or just an hour before cooking!

Ingredients
  

Pork

  • 1 pound pork tenderloin cut into thin slices
  • 1 large onion cut into thin slices
  • 1 tbsp oregano
  • 1 tsp ground thyme
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 2 tsp honey
  • 1 tsp salt
  • 1/2 tsp pepper

To Serve

  • 4 pieces pita
  • 1 cucumber thinly sliced
  • 2 tomatoes thinly sliced
  • 14 oz can of artichoke hearts
  • 4 oz feta
  • Tzatziki Sauce to taste

Instructions
 

  • In a large bag or container mix the pork, onion, oregano, thyme, red wine vinegar, olive oil, garlic, honey, salt, and pepper.
  • Place in the fridge and marinate for at least 1 hour or overnight.
  • Once ready to cook, heat a large cast iron skillet over medium-high heat. Add the pork and onions, cooking for about 8-9 minutes, until the onions become soft, and the pork is no longer pink.
  • Drain the excess liquid and add the pork and onions back into the skillet. Continue to mix, cooking until the pork begins to brown about 3 minutes.
  • Serve on top of a piece of pita with tzatziki sauce, and toppings like tomato, cucumber, feta, and artichoke hearts.

Notes

I like to put my pita in the toaster oven for a few minutes to soften up before building my gyro. 
There’s almost no such thing as too much tzatziki sauce. Never.
