I love tacos, and I love salad, so why not combine them into one incredibly delicious dish? This taco salad pairs ground turkey and tons of veggies with a super easy-to-make dressing for a fun, fast meal. Sprinkle some chips and cheese on top, and you have a healthy and flavorful salad ready in less than 30 minutes!
Ground Turkey Taco Salad
Save some dressing on the side to dip extra tortilla chips into!
Ingredients
Salad
- 1 pound ground turkey
- 1 oz packet of taco seasoning
- 3 heads Romain lettuce chopped
- 1 bell pepper chopped
- 2 Roma tomatoes chopped
- 15 oz can of corn drained
- 1/2 cup Mexican cheese blend shredded
- 1 cup tortilla chips crushed
Dressing
- 1/2 cup plain greek yogurt
- 1/2 cup salsa
Instructions
- Place a medium-sized skillet over medium-high heat. Add ground turkey, breaking apart until fully cooked and no longer pink, about 7-8 minutes. Drain any excess grease.
- Add the taco seasoning and 3/4 cup of water. Simmer for 3-4 minutes until most of the liquid is absorbed.
- To make the dressing, mix together the Greek yogurt and salsa in a small bowl.
- Chop, rinse, and dry the lettuce. In a large bowl mix together the lettuce, pepper, tomato, corn, and cheese.
- Serve lettuce mixture, topped with ground turkey, chips, and the dressing.
- Enjoy!
Notes
You can add black beans, avocado, or green onion to this salad.
Feel free to use ground beef or chicken rather than turkey or make your salad vegetarian by subbing in beans instead.
I use FAGE 2% Greek yogurt. Use whatever salsa you prefer. I like to get a medium spice level to give the salad a nice kick.
Add the tortilla chips to the salad last or they will get soggy.
