Shrimp Fried Rice

Packed with veggies, eggs, soy sauce, and of course shrimp, this easy one-pot meal cooks in just 30 minutes. I add green beans to this recipe but feel free to include or substitute any veggie of choice. Broccoli, mushrooms, or asparagus would be great in here, too!

Shrimp Fried Rice

Add whatever protein you want to this dish, I just find shrimp to be easy and tasty!

Ingredients
  

  • olive oil
  • 3 cups cooked jasmine rice (1 cup uncooked)
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/2 pound peeled and deveined raw shrimp cut in half
  • 3 eggs
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bunch green onions chopped, greens and whites separated
  • 2 large carrots chopped
  • 1/2 pound green beans cut into 1 inch pieces
  • 1/2 cup peas
  • 1/4 cup soy sauce
  • 1 tbsp oyster sauce

Instructions
 

  • Cook rice according to package directions.
  • Heat olive oil in a wok or large pot over medium-high heat. Add shrimp, black pepper, and garlic powder. Cook for 3-4 minutes, stirring occasionally until fully cooked. Set them into a bowl for later.
  • Once the shrimp are set aside, drizzle olive oil into the wok. Add whisked eggs, scrambling until cooked, about 4 minutes. Pour into the bowl with shrimp for later.
  • Add olive oil one more time into the wok and sauté onion for 3 minutes until translucent.
  • Add in garlic, carrots, green beans, and whites of green onion. Sauté for 8-10 minutes until veggies are tender.
  • Pour in cooked shrimp, scrambled eggs, rice, peas, soy sauce, and oyster sauce. Cook until heated through.
  • Garnish with the green parts of the green onion and serve.

Notes

I rinse my rice before cooking so that it’s less starchy. 
Leftover rice is also perfect to use in this recipe!
I buy frozen, raw, peeled, and deveined shrimp from Costco. I thaw whatever I need the night before in my fridge. If you don’t thaw overnight, add the frozen shrimp to a bowl and pour warm (not hot) water over your shrimp. Let sit for 2 minutes, pour water out, and continue to do this about 3 times until the shrimp are thawed. Do not use hot water or the shrimp will start to cook.
