Peanut Butter Oat Balls

Sometimes, I can’t make it from breakfast to lunch without a snack. And every now and then, I need something sweet after lunch to complete my meal. These Peanut Butter Oat Balls are perfect for both situations and so many more. They make a great on-the-go breakfast or a healthy late-night dessert! I usually throw them together over the weekend so I have a high-protein, mess free snack ready for any situation that comes up in a busy day.

Peanut Butter Oat Balls

Remember to use mini chocolate chips to ensure chocolate in every bite!

Ingredients
  

  • 1 cup oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 2 tbsp chia seeds
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips

Instructions
 

  • Add the oats, peanut butter, honey, chia seeds, salt, and cinnamon to a food processor.
  • Pulse until mixture is combined. You may need to scrape down the side during this process to get it all incorporated.
  • Using a spatula, mix in mini chocolate chips by hand.
  • Form ping pong sized balls with the mixture and store them in a sealed container in your fridge. You should be able to make about 16 balls. Enjoy throughout the week!

Notes

If you don’t have a food processor, you can combine all ingredients in a bowl, stir them, and form your balls. I find the balls stick together better when I use a food processor but it does work fine without.
