Peanut Butter Granola

Homemade granola is an easy make-ahead meal that you can enjoy all week! It is much better than store-bought granola, saves money, and is much healthier and tastier. It’s a breakfast you can feel good about eating and will keep you full all morning because it’s packed with protein from nuts and peanut butter.

I love eating my peanut butter granola with plain Greek yogurt and strawberries, bananas, or blueberries. It’s also great with milk or as a snack on its own.

Peanut Butter Granola

Ingredients
  

  • 2 cups oats
  • 1/2 cup pecans chopped
  • 1/2 cup sliced almonds
  • 1/2 cup unsweetened coconut flakes optional
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup peanut butter
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 325 degrees. Prepare a large baking sheet with nonstick cooking spray.
  • Mix oats, pecans, almonds, coconut flakes, cinnamon, and salt in a medium bowl.
  • Melt peanut butter in a small bowl in the microwave, stirring every 15 seconds until pourable (about 30-45 seconds total). Mix in maple syrup and vanilla.
  • Pour wet ingredients into dry ingredients and stir.
  • Pour the granola mixture onto the baking sheet, pressing down so the mixture is in one flat layer.
  • Bake for 30-40 minutes, mixing halfway through so that everything cooks evenly. Remove from the oven once the oat mixture begins to brown and smell nutty.
  • Let cool on the baking sheet for about 20 minutes and then break apart and store in sealed containers.
  • Enjoy your granola with yogurt or milk.

Notes

You can add any nuts that you want. Feel free to substitute the pecans for walnuts or only use one nut instead of two. 
Coconut flakes can be a polarizing ingredient. I promise this granola is just as good without coconut flakes as it is with them. 
You can substitute almond butter for peanut butter! I’ve done it before and it’s very delicious.
