Peanut Butter Banana Oat Bake

Peanut Butter Banana Oat Bake

Ingredients
  

  • 2 cups old fashioned oats
  • 2 medium ripe bananas
  • 1/2 cup creamy peanut butter
  • 2 cups milk skim, whole, almond, or oat
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup semisweet chocolate chips optional

Instructions
 

  • Preheat oven to 350 degrees and grease a 9 x 11-inch baking dish.
  • In a medium bowl, mash 2 bananas. Add peanut butter to the bananas and mix with a spatula.
  • Mix in the oats, salt, milk, and vanilla extract. Finally, add in the chocolate chips.
  • It's okay if your mixture is wet, the oats will soak up all of the milk when baked.
  • Pour the oat mixture into the baking dish. Add extra chocolate chips on top if you want!
  • Place in the oven and bake for 30-40 minutes, until set.
  • Let cool for about 10 minutes before cutting and serving. Store in an airtight container in your refrigerator. Feel free to microwave before eating or enjoy straight out of the fridge!

Notes

If you don’t have salt or vanilla extract, you can leave it out and the dish will still be tasty!
You can use any milk you want; almond milk, oat milk, skim, or whole all work well.
