Lightened-Up Caesar Salad

This anchovy-free Caesar salad recipe is easy to throw together and so much better than store-bought Caesar dressing. It’s a healthy take on classic Caesar salad, with Greek yogurt and lemon juice to brighten up the whole dish.

I’ve made this salad more times than I can count. It’s my go-to when I want a fresh meal that is easy, tasty, and healthy and something I gravitate towards when I need something to bring to a potluck.

Lightened up Caesar Salad

You can make the dressing up to a day ahead of time and add it to the salad right before serving.

Ingredients
  

Salad

  • 3 heads romaine lettuce chopped
  • 1 cup croutons
  • 1 cucumber (about 1 1/2 cups) thinly sliced in quarters
  • 1/2 cup parmesan cheese shredded

Dressing

  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp Worcestershire sauce
  • 1 garlic clove crushed
  • 2 tbsp fresh lemon juice (1 lemon)
  • 1 tsp Dijon mustard
  • 2 tbsp grated parmesan cheese
  • salt to taste
  • pepper to taste

Instructions
 

  • Chop, wash, and dry lettuce.
  • In a large bowl combine the lettuce, cucumber, croutons, and parmesan cheese.
  • With a rubber spatula, mix all dressing ingredients together.
  • Mix dressing into the salad, holding back some at first to make sure you have the correct salad-to-dressing ratio.
  • Serve as a side dish or make it a meal by adding chicken, salmon, shrimp, garbanzo beans, or any other toppings.

Notes

Feel free to add anchovy paste or diced-up anchovies to the dressing. I’ve made this recipe with and without anchovy paste and it’s delicious both ways!
Make sure to fully dry your romaine lettuce before adding the dressing or your salad might be a bit watery.
You can make homemade croutons or go for the store-bought (I like garlic and parmesan croutons) to make it even easier!
