My criteria for a good breakfast is simple: it needs to taste good and keep me full until lunch. My English Muffin Breakfast Sandwiches easily check both boxes and are one of my absolute favorite meal preps. You only need about 30 minutes to toss them together and a minute to heat them up in the morning. They also freeze really well, so you can pop a few in the freezer and always have one on hand when the morning gets hectic.
English Muffin Breakfast Sandwiches
Switch up your meat each time you make these! Use bacon, sausage, or ham to add some variety to your mornings.
Ingredients
- 6 English muffins
- 6 pieces of ham, sausage, or bacon
- 6 eggs
- 2 tbsp milk
- 1/4 tsp salt
- 1/4 tsp pepper
- 6 slices cheese (I prefer sharp cheddar or colby jack)
Instructions
- Preheat oven to 350 degrees. Prepare a glass baking dish with nonstick cooking spray. Choose a dish that you can snugly fit 6 English muffins in, allowing you to get the perfect size egg square for each breakfast sandwich.
- In a medium bowl whisk the eggs, milk, salt, and pepper.
- Pour the egg mixture into the baking dish and place in the oven, cooking for about 15 minutes, until the eggs are fully set. Cut into 6 pieces to fit into your sandwiches.
- In a large skillet over medium-high heat cook your meat of choice. Ham: Brown the ham in the skillet to get some nice color for about 2 minutes per side. Sausage: If pre-cooked no need to do anything. If raw, cook for about 3-4 minutes per side, flattening the sausage patties as they cook.Bacon: Cook bacon in the skillet until crispy, about 10-12 minutes, flipping at about 6 minutes.
- To assemble the breakfast sandwiches, open the English muffin and layer cheese, eggs, and meat. Wrap in tinfoil and enjoy throughout the week.
- To reheat, wrap the sandwich in a damp paper towel and microwave for about 45 seconds. If your breakfast sandwich is frozen, you will need about 30 more seconds.
Notes
These are perfect for freezing. Once wrapped in tin foil, place in a gallon-size ziplock bag. Freeze for up to 6 months. Remove from the freezer the night before you want to eat. Follow the heating instructions in the last step above.
