Egg and Sausage Breakfast Casserole

Eggs, sausage, tater tots, veggies, and cheese all packed into one easy meal. This egg bake is perfect for breakfast or brunch. Prep Sunday night and have breakfast covered all week or toss this together the morning of and serve for family and friends.

Egg and Sausage Breakfast Casserole

This protein-packed breakfast is sure to keep you full until lunch.

Ingredients
  

  • 1 pound ground pork sausage
  • 1 large onion chopped
  • 16 oz frozen tater tots
  • 1 cup red bell pepper chopped
  • 1 cup spinach chopped
  • 12 eggs
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup sharp cheddar cheese shredded

Instructions
 

  • Preheat oven to 350 degrees. Spray an 8 x 11-inch glass dish with cooking spray.
  • Pour frozen tater tots into an even layer on the bottom of the dish.
  • Preheat a large skillet over medium-high heat. Add sausage and onion, breaking apart sausage until fully cooked. Drain excess grease.
  • Pour sausage mixture over tater tots along with chopped pepper and spinach.
  • Whisk eggs with milk, garlic powder, salt, and pepper. Pour into the dish over the rest of the ingredients.
  • Bake for 30 minutes. Remove from oven and add cheese. Bake for another 20-30 minutes until the egg bake is fully set.
  • Serve immediately or let cool and package in containers for later.

Notes

You can hold out the meat to make this vegetarian. 
Feel free to add any additional or alternate veggies of your choice. 
Not sure if your eggs are fully set and cooked? Take the back of a spoon or fork and gently press the middle of the casserole. If you see egg mixture oozing through, it needs a little more time.
