Crescent Roll Egg Bites

These Egg Bites are a definite crowd-pleaser with their buttery crust and protein-packed filling. It’s an easy grab-and-go breakfast to prepare at the beginning of the week or perfect when hosting brunch for friends or family.

Crescent Roll Egg Bites

Ingredients
  

  • 8 oz can of crescent rolls
  • 4 strips bacon cooked and chopped
  • 1/4 cup red bell pepper chopped
  • 1/2 cup spinach chopped
  • 1/2 cup cheddar cheese shredded
  • 7 large eggs
  • 1/3 cup milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder

Instructions
 

  • Preheat oven to 350 degrees. Prepare 12 muffin rounds with non-stick cooking spray.
  • Remove crescent rolls from the package. Using a rolling pin, roll out the dough until it's in one even layer. Cut the dough into 12 even squares. Press the dough into each round of the pan.
  • Top the dough with bacon, pepper, spinach, and cheese.
  • Whisk together eggs, milk, salt, pepper, and garlic powder.
  • Pour the egg mixture evenly into the muffin rounds. The egg mixture should fill each cup up about 3/4 of the way because the egg bites puff up when cooked.
  • Bake for 18-22 minutes, until the eggs are set.
  • Let cool for 5 minutes before removing from the pan and enjoying.

Notes

You can substitute the bacon for sausage or omit it altogether. 
Feel free to add your choice of veggies. Other options are sautéed onions, green pepper, or broccoli.
