Chicken Parmesan

Few dishes scream comfort food quite like Chicken Parmesan.

A tender, breaded chicken breast covered in rich tomato sauce, blanketed by melty mozzarella, and resting on a bed of pasta is the perfect way to end a long day. Open a bottle of wine and toss a quick salad to round out the kind of dinner that would make your Italian grandma proud.

Chicken Parmesan

Ingredients
  

  • 1 pound chicken breast
  • 2/3 cup panco breadcrumbs
  • 1/3 cup parmesan cheese
  • 1 tsp Italian seasoning
  • black pepper to taste
  • salt to taste
  • 2 eggs
  • 1/2 cup flour
  • 1/3 cup olive oil or vegetable oil
  • 1 pound spaghetti
  • 2 cup pasta sauce
  • 8 oz fresh mozzarella cheese
  • basil optional

Instructions
 

  • Turn oven to 350 degrees. Prepare a glass baking dish with nonstick cooking spray.
  • Cook spaghetti according to package instructions.
  • Take out 3 medium bowls. Add flour to one, eggs to one, and panko breadcrumbs plus parmesan cheese to one. Season each bowl with salt and pepper and add the Italian seasoning to the bowl with breadcrumbs.
  • Cut each chicken breast in half so that your meat is thinner or pound it out with a meat mallet.
  • Dip each piece of chicken in flour until it is fully covered in a thin layer, shaking excess off. Then dip in the egg mixture. Let excess egg run off the chicken, then dip in the bread crumbs until fully coated.
  • Turn a large pan on over medium-high heat. Add 1/3 cup of oil. Once hot, add the breaded chicken and cook for about 4 minutes per side until internal temp reaches 165. Turn the heat down to medium if the chicken is browning too fast.
  • Once the chicken is cooked lay it in the glass baking dish. Top with marinara sauce, parmesan cheese, and fresh mozzarella. Save extra marinara sauce to add to the pasta at the end!
  • Bake at 350 degrees for about 10 minutes, until cheese is melty.
  • Serve over spaghetti and garnish with basil!

Notes

It’s important to add your chicken to a hot pan. Otherwise, it won’t get the nice brown color and the breading is more likely to fall off. 
If you don’t have fresh mozzarella you can use shredded mozzarella cheese instead!
