Breakfast Pizza

Breakfast pizza is something I would throw together when I had leftover naan and veggies. It always tasted amazing, but then I’d forget about it for months until I had the right leftover ingredients again. This time I decided to plan my recipe out and it did not disappoint. I used bacon which added a rich salty flavor and made a garlicky olive oil which was brushed onto the naan.

I've meal prepped this breakfast pizza for the whole week. Just a few minutes in the toaster oven is all you need to melt the cheese and give the naan a nice crispy bottom.

Ingredients
  

  • 6 mini or 3 large pieces of naan
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 4 pieces bacon
  • 6 eggs
  • 1/4 cup milk
  • salt to taste
  • pepper to taste
  • 1 large tomato chopped
  • 1/2 bell pepper chopped
  • 3/4 cup sharp cheddar cheese shredded

Instructions
 

  • Preheat oven to 400 degrees. Lay naan on a large baking sheet.
  • Mix together minced garlic and olive oil. Brush onto the naan.
  • Add the chopped tomatoes and pepper on the naan. Place in the oven and bake for 10 minutes.
  • Heat large skillet over medium-high heat. Add bacon and cook for about 5 minutes per side, until fully cooked and starting to get crisp. Remove bacon from the pan, placing on paper towels to soak up excess grease. Chop and save for later.
  • Whisk eggs, milk, salt, and pepper in a small bowl.
  • Keeping about 1 tablespoon of bacon grease in the pan, pour in the egg mixture and cook on medium heat, scrambling for about 4 minutes until fully cooked.
  • Add eggs and bacon on top of the pepper and tomatoes on the naan and top with cheddar cheese. Put back into the oven and cook until cheese is melted about 5 minutes.
  • Enjoy!

Notes

We get mini naan from Costco. It’s easy to freeze and take out right before you want to use it. 
You can make this without bacon for a vegetarian breakfast!
If I have any leftover French fries or potatoes, I add them to the breakfast pizza at the same time that I add the eggs and it’s so good.
