A classic beef chili perfect to warm you up on an overcast day. This easy one-pot recipe gains flavor while simmering for 30 minutes, giving you the opportunity to clean the kitchen, walk the dog, or do anything else on your to-do list.
Beef Chili
You just might want to get some cornbread to enjoy with this tasty chili.
Ingredients
Chili
- 1 onion diced
- 1 1/2 pounds ground beef
- 4 cloves garlic minced
- 1 poblano pepper diced
- 2 tbsp chili powder
- 1 tbsp cumin
- 1/2 tsp salt
- 1 tsp oregano
- 1/4 tsp cayenne pepper optional
- 1 tbsp tomato paste
- 28 oz diced tomatoes
- 8 oz tomato sauce
- 4 oz diced green chilies
- 15 oz garbanzo beans or bean of choice drained
Toppings
- sour cream
- shredded cheddar cheese
Instructions
- Heat Dutch oven or large pot over medium-high heat. Once hot, add onion and ground beef, breaking beef apart and mixing until no longer pink, about 7-8 minutes. Drain excess grease.
- Add garlic and poblano pepper, cooking for about 2 minutes.
- Stir in the tomato paste, chili powder, cumin, cayenne pepper, and salt. Cook for one more minute until all ingredients are coated in the tomato paste and spices.
- Add diced tomatoes, tomato sauce, green chilies, and beans.
- Bring to a simmer. Cover and turn to low heat. Check to be sure it's still simmering. Cook for 30 minutes, stirring occasionally.
- If you want a thicker chili, take the top off and simmer for the last 5-10 minutes.
- Serve with sour cream and shredded cheddar cheese!
Notes
I typically use ground beef with 20% fat. You can substitute your ground beef for ground turkey.
If you want more liquid in your chili, add 1/2 cup of chicken or beef stock.
