Barbecue Chicken Pizza

Everyone has their pizza preferences but most people can agree that BBQ chicken pizza is a great option when ordering out. The sweet and savory barbecue sauce adds a ton of dimension, along with lots of protein from the chicken, veggies from the green peppers and onion, and, of course, delicious and salty flavor from the cheese. You can use pre-cooked and shredded chicken, but I recommend following my recipe for shredded BBQ chicken, which adds even more flavor to this already delicious pizza.

Barbecue Chicken Pizza

Ingredients
  

Shredded Chicken

  • 1 pound chicken breast
  • 3/4 cup barbecue sauce (I like Sweet Baby Rays)
  • 1/4 cup low-sodium chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Pizza

  • pizza dough for one 12-inch pizza
  • 1/2 tbsp olive oil
  • 1 red onion thinly sliced
  • 1/2 green bell pepper chopped
  • 1/2 cup barbecue sauce
  • 1 cup Colby jack cheese shredded

Instructions
 

Chicken

  • Whisk the barbecue sauce, chicken broth, onion powder, garlic powder, salt, and black pepper in a small bowl.
  • Make the shredded chicken using one of the following methods:
    Instapot: Add chicken breast to the Instapot and pour barbecue mixture on top, mixing it around so it coats all the chicken. Secure the lid and cook on high pressure for 15 minutes. Let the steam release, remove the top, and shred the chicken.
    Slow Cooker: Add chicken breast to the slow cooker and pour barbecue mixture on top, mixing it around until fully coated. Place the top on the slow cooker and cook on low for 7-8 hours or high for 3-4 hours. Once done, shred the chicken.

Pizza

  • In a small pan over medium-high heat, add olive oil and red onion. Sauté for about 5 minutes, until soft.
  • Preheat the oven to 425 degrees. If using a pizza stone or cast iron skillet, place them in the oven as it preheats.
  • Form the pizza dough into a 12-inch round. Spread 1/2 cup barbecue sauce on the dough followed by the shredded chicken, diced green peppers, red onion, and cheese.
  • Place the pizza onto the preheated pizza stone, cast iron skillet, or baking sheet. Cook for about 15 minutes, until the cheese is melted and the crust is done to your liking. Add a few extra minutes if needed.
  • Remove from the oven, cut into pieces, and enjoy!

Notes

If you want to grill your pizza instead of baking it, heat the grill to 400 degrees. If using a pizza stone, place it on the grill for 10 minutes as it pre-heats. Otherwise, you can place your pizza directly onto the grates or a grill mat. Cook for about 15 minutes, until the cheese is melted and the crust is done to your liking.
