Cottage Cheese Egg Bites

Meal-prepping breakfast for the week on Sunday makes mornings so much easier, especially with a toddler. These Cottage Cheese Egg Bites are packed with veggies and plenty of protein, thanks to bacon, cottage cheese, and eggs to keep you full all morning. Plus, the cottage cheese makes the eggs super creamy and savory.

Cottage Cheese Egg Bites

Both my toddler and husband scarfed these down. I need to make a double recipe!

Ingredients
  

  • 8 large eggs
  • 3/4 cup cottage cheese
  • 1/4 cup cheddar cheese shredded
  • 1/3 cup bell pepper (1/2 a pepper) chopped
  • 1/2 cup cooked bacon (4 strips) chopped
  • 1/2 cup spinach chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Pre-heat oven to 350 degrees. Prepare a 12-cup muffin pan with muffin tins and spray with nonstick cooking spray.
  • In a blender add the eggs, cottage cheese, salt, and pepper. Mix on medium speed for about 30 seconds until smooth.
  • Divide the chopped bell pepper, bacon, and spinach evenly between the muffin tins.
  • Pour the egg mixture over top, filling each cup about 3/4 of the way full.
  • Finally, top each mixture with shredded cheddar cheese.
  • Bake for 20-25 minutes until fully set.

Notes

I recommend using a red, orange, or yellow bell pepper. 
If you’d like to mix it up, feel free to use cooked ground sausage instead of bacon or leave the meat out to make the egg bites vegetarian.
Be sure to use the foil muffin tins, not the paper ones, so your eggs don’t stick to the paper after cooking.
