Pasta with Vodka Sauce
Pair this creamy pasta with a fresh side salad and your dinner will be complete!
Ingredients
- 1 pound rigatoni
- 1 tbsp butter
- 1 onion diced
- 2 garlic cloves minced
- 1/2 tsp red pepper flakes optional
- 6 oz tomato paste
- 1/3 cup vodka
- 1 cup heavy whipping cream
- 1/2 cup parmesan cheese shredded
Instructions
- Cook pasta according to package directions. Hold aside 1 cup of pasta water to add to the sauce later.
- Melt butter in a large pot over medium heat. Add onion and cook for 5 minutes, stirring occasionally.
- Stir in garlic and red pepper flakes, cooking for 1 minute.
- Add tomato paste, stirring to coat the onion, and cook for 3 minutes.
- Add vodka, and stir for about 2 minutes.
- Add heavy cream and parmesan cheese, mixing for about 2 minutes until the cheese is melted.
- Mix pasta into the sauce. Add 1/4 cup of the reserved pasta water into the pasta mixture at a time until you get your preferred sauce thickness.
- Serve with extra parmesan cheese on top!
Notes
You can use this vodka sauce for just about anything! Add to zoodles, gnocchi, lasagna, or whatever happens to be your favorite pasta!
