Delicata squash is one of my favorite fall veggies. It’s sweet, nutty, and cooks quickly without needing to be peeled. Topped with brown sugar, the squash makes an excellent side dish with everything from chicken, to fish, to pork.
Roasted Delicata Squash
You don't have to peel your delicata squash because the peel becomes tender and edible when roasted. It's also a great source of fiber!
Ingredients
- 1 medium delicata squash
- 1 tbsp olive oil
- 1/4 tsp salt
- 1 tbsp brown sugar
Instructions
- Preheat oven to 425 degrees. Prepare a large baking sheet with nonstick cooking spray.
- Wash the delicata squash, cut it in half, and scoop out the seeds.
- Cut each half into 1-inch moon-shaped pieces. Place onto the baking sheet and toss with olive oil and salt. Organize in a single layer.
- Place in the oven and roast for about 30 minutes, mixing halfway through. Your squash should be fork-tender.
- Sprinkle brown sugar on top and place back into the oven for 5 more minutes.
- Remove from the oven and enjoy!
Notes
If you don’t have brown sugar you can use maple syrup instead.
If you don’t want the extra sweetness from the sugar you can eat the delicata squash as is while skipping the brown sugar step.
You should roast your squash in a single layer to allow it to brown and cook evenly.
