French toast, pancakes, or waffles? It’s one of the greatest debates known to man. In my opinion, there’s no wrong answer, especially when you top your favorite with a sweet, strawberry compote.
If you’re in the French toast mood, then this is exactly what you need to satisfy your craving. Fluffy brioche serves as an ideal base to soak up a cinnamon and sugar egg mixture that has an added kick of vanilla. Feel free to eat it with syrup, but the strawberry compote may just be topping enough for this fun breakfast treat.
French Toast with Strawberry Compote
The strawberry compote is so incredibly delicious you may want to make extra to use on ice cream, pancakes, or any other treat of choice!
Ingredients
French Toast
- 8 slices brioche bread
- 1/2 cup milk
- 4 eggs
- 1 tsp cinnamon
- 1 tbsp sugar
- 1/2 tsp vanilla extract
- butter for cooking
Strawberry Compote
- 1 pound strawberries
- 2 tbsp brown sugar
- 1/2 tsp vanilla
- 1 tbsp freshly squeezed lemon juice (about 1/2 lemon)
Instructions
French Toast
- Heat a large skillet to medium heat. Add 2-3 small pats of butter and let melt.
- In a medium bowl whisk together eggs, milk, cinnamon, sugar, and vanilla.
- Dip the bread in the egg mixture. Brioche tends to soak up eggs quickly, so you probably only need to let soak for 2-3 seconds. If you are using a heartier bread, let it soak for longer.
- When removing the bread from the egg mixture, let any excess egg drip back into the bowl before placing it into the skillet.
- Add 2-3 pieces of bread to the skillet and let cook for about 3 minutes per side until golden brown and the egg is no longer runny. Your first round will most likely take longer to cook due to the skillet not being as hot.
- Serve with strawberry compote, maple syrup, or other toppings of choice!
Strawberry Compote
- Add fresh or frozen strawberries to a small pot over medium heat. Once strawberries begin to heat up and become soft add the brown sugar, vanilla, and lemon juice. This will take longer for frozen strawberries than fresh ones.
- Simmer for 10-15 minutes. Mash strawberries if you want them in smaller chunks or gently stir if you want them larger.
- Serve on top of french toast!
Notes
If you don’t want strawberry compote, follow the French toast recipe and top with syrup, bananas, or fresh strawberries.
